Eutrema Japonicum (En)

A short trip to Nagano valleys was an occasion to visit the largest wasabi farm in Japan, Daio Wasabi Nojo, located in Azumino. The multiple large fields are made of earth and gravel upon which flow the pristine waters of Northern Alps, thanks to a finely regulated network. Rows of plants are skillfully oriented to nurture the growth of that very demanding plant. Did you know that, not unlike other roots (picked from organic fields!), leaves and stalks can be prepared in various recipes, where they keep this typical spiciness?
